Gluten Free and Dairy Free Chocolate Cookies 🍪

 

2 1/4 cups plain gf flour

1/2 teaspoon salt

1 tsp baking soda

1/2 cup icing sugar

1 1/4 cup brown sugar

1/2 cup cocoa powder

7 tablespoon dairy free butter (I used Nuttelex)

1 tablespoon vanilla essence (+ little bit more)

2 eggs

 

 

Preheat oven 180 degrees

Slowly mix all together in a bowl with an electric beater until it forms a thick dough

Roll into small balls and put onto baking paper on a baking tray

Put the rolled cookies into the freezer for a maximum of 5 minutes

Take tray from the freezer and put into the oven for approximately 12 minutes

When they feel hard around the outside and soft in the middle remove from the oven

Transfer cookies onto cooling rack

Repeat process with remaining dough

 

Tip: I used two trays and at 7 minutes put the second tray into the freezer for 5 minutes then after removing the first tray from the oven put in the second tray of cookies 😋

 

Depending on the size of the cookie balls you create this recipe can make about 40 small cookies

Perfect for a little lunch box treat

Or a little snack for Mummy with her coffee or tea ☕️
